Milkman Milk Raspberry Coffee Cake
Ingredients:
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 1/2 cup Milkman Milk (reconstituted)
- 2 eggs
- 1 tsp vanilla extract
- 1 cup fresh raspberries
For the Streusel Topping:
- 1/2 cup sugar
- 1/3 cup all-purpose flour
- 1/4 cup butter, cubed
- 1 1/2 tsp ground cinnamon
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9-inch round baking pan.
- In a large bowl, mix together flour, sugar, baking powder, and salt.
- In another bowl, combine melted butter, Milkman Milk, eggs, and vanilla. Stir into dry ingredients until just moistened. Fold in raspberries.
- Pour into the prepared pan.
- For the topping, combine sugar, flour, butter, and cinnamon until crumbly. Sprinkle over batter.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Cool before serving.
