Pumpkin Spice Protein Marshmallows
Recipe:
2 cups Milkman milk
5 Tbsp gelatin
1/4 cup pumpkin puree
1 tsp vanilla extract
1/3 cup maple syrup
1/3 cup unflavored or vanilla protein powder
1 tbsp cinnamon
Instructions:
1. Pour 2 cups of cold milk in a saucepan and whisk in gelatin. Let it bloom for 5 minutes before bringing to a simmer for another 5 minutes. Let this mixture cool slightly.
2. Add pumpkin, vanilla, maple syrup, protein powder, and 1/2 tsp cinnamon to the mixer. Pour in the warm milk, add whisk attachment, and whisk on medium to high speed for 8-10 minutes. Watch this process to make sure it doesn't over mix. Stop when it reaches a fluffy and creamy consistency (like whip cream).
3. Place parchment paper in a pan and dust with cinnamon. Pour in marshmallow fluff. sprinkle again with cinnamon.
4. Place in the fridge for 1 hour.
