Ingredients

3 cups Milkman whole milk (shaken with a quart of water)

6 egg yolks

4–6 tbsp maple syrup or honey (to taste)

2 tsp vanilla extract

2 pinches salt

2–4 tsp sugar or monk fruit sugar(for brûlée topping)
Instructions

Preheat oven to 325°F . Place 4–6 ramekins in a baking dish.

In a bowl, whisk egg yolks, maple syrup, vanilla, and salt until smooth.

Heat milk over medium-low until hot but not boiling.

Slowly whisk the warm milk into the egg mixture.

Pour into ramekins.

Add hot water to the baking dish halfway up the ramekins.

Bake 45-40 minutes, until centers are slightly jiggly.

Cool completely, then refrigerate 2+ hours.

Sprinkle sugar on top and torch (or broil briefly).
