Ingredients:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1 1/4 cups vegetable oil
- 1 cup sugar
- 1 cup brown sugar
- 4 large eggs
- 1/4 cup Milkman Milk (reconstituted)
- 2 tsp vanilla extract
- 3 cups grated carrots
- Optional: 1/2 cup chopped nuts or raisins
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, beat together oil, sugars, eggs, Milkman Milk, and vanilla.
- Gradually add dry ingredients to the wet ingredients. Stir in carrots and optional nuts or raisins.
- Pour into prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
