Milkman Milk Carrot Cake

Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1 1/4 cups vegetable oil
  • 1 cup sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1/4 cup Milkman Milk (reconstituted)
  • 2 tsp vanilla extract
  • 3 cups grated carrots
  • Optional: 1/2 cup chopped nuts or raisins

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat together oil, sugars, eggs, Milkman Milk, and vanilla.
  4. Gradually add dry ingredients to the wet ingredients. Stir in carrots and optional nuts or raisins.
  5. Pour into prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack.
